Biancheté

A red grape, Corvina, and a white soil are the perfect combination to create this particular and unusual white wine. A different shade for our queen of grapes.

Pergola veronese

WINE MAKING
We harvest the grapes by hand at the beginning of September, selecting the less-mature grapes. After the harvest, we immediately crush and press the grapes to divide the liquid from the coloured substances of the grapes skins. The fermentation is very slow, at low temperature and it continues for about 10-15 days.

AGEING
In steel tanks until bottling and in bottle before entering the market.

TASTING NOTES
Straw-yellow colour. Mineral, winy and fruity flavours, in particular citrus and white fruit notes. Dry with zesty, mineral and fresh flavours and characteristics.

SERVING SUGGESTIONS
As aperitif or with fish, such as salmon, trout, eel and shellfish. Especially suitable with cooked and raw fish or with fat cold cuts such as bacon, salami or lard. The recommended drinking temperature is between 10°-12°C (50°-54°F).

NOTES
Biancheté is the white expression of Valpolicella. Produced with 100% Corvina white vinifiation, it shows its personality respecting its red grapes roots.

The name “Biancheté” comes from the dialect name of the white limestone we find in our vineyards.
