WINE MAKING
The lightly overripened grapes are harvested by hand in October. Later, we press the grapes and we put the pressings into steel tanks where juice ferments with grapes skins for 18-25 days. During fermentation, the wine and the grapes skins are mixed daily by hand with pump-over into the lap and delastage to get the maximum out of the product.
AGEING
Three to four years in second/third passage small old French oak barrels and in big Slavonian oak barrels.
TASTING NOTES
Alla vista è di colore rosso rubino intenso e profondo. Al naso è intenso, elegante, avvolgente con leggeri sentori di mandorla e più marcati sentori di confettura di ciliegie e di prugne. Al palato è elegantemente dolce, caldo, morbido, intenso, molto persistente, abbastanza complesso con note fruttate di ciliegia surmatura e prugna secca.
SERVING SUGGESTIONS
Biscotti secchi, pasta frolla, sbrisolona alle mandorle, formaggi stagionati, cioccolato fondente. Ottimo da fine pasto. Servire a 14°-17°C.
NOTES
Daniele’s, our winemaker, ideal wine is expressed in this bottle. We dedicate Brigasco to an ancient symbol we found set into a wall of our ancient Corte dei Merli. Carved into the limestone, our local stone, it was realized by our ancestors more than four centuries ago.
